In "Baco" you feel at home

Pavel Vetsov, called by all who know him - Bakoto, is the owner of the famous not only in Chepino, but throughout the Velingrad establishment "Bako". Together with his wife, he has been engaged in t. N.A. family business in the field of food service. Bakoto was one of the first to set up his own establishment and his pub became a preferred place for many satisfied customers.
Always polite and smiling, the host offers cosiness and a pleasant atmosphere. And now in the cold winter days the restaurant operates a local heating, and the burning wood in the fireplace brings the atmosphere closer to the family comfort, which is complemented by the pleasant folk music. We asked Bakoto what made him return to the craft of his grandfather Pavel Ivanov Shantandzhiev, who in 1923. built the house and made the pub, which now bears the name "Baco". The portrait of the grandfather and now his grandson Pavel Vetsov is prominently placed in the establishment. "Once upon a time, they used to say to my grandfather 'baco', which means 'brother'. So gradually this became his nickname and they started calling him that way. My grandfather was an interesting person. He participated in the Balkan, Inter-Allied and First World War as part of 27 Chepinski Regiment. He received many orders of valor, was a cavalryman, and led the regiment's brass orchestra. After the wars he built the present house and from 1923. began to engage in pub business. He had 5 daughters, I am his youngest grandson and it fell to me to continue what my grandfather started. Before I started in the pub, I did a lot of different jobs. At first I worked as a carpenter in a shop in Chepino, then I graduated from a construction technical school in Bratsigovo. I worked on Belmeken, on the dams of the river. Vacha also on the river. Kamchia. I worked on Yundola on the seed farm for a while and my last job was at MTS. When in 1991 under the Restitution Act, I was given back ownership of this room, I decided to renovate it and make it into an establishment. For nearly two years, with my own strength and means, and with the help of my wife, my friends and acquaintances, I turned a "dukyana", as we called it, into this establishment. Some believe that someone else did my project for the look and feel, but I did it all myself, thanks to my knowledge from the Construction Technical School. Once everything was done, the pub started operating in 1993, a few days before Christmas. Before that, I had prepared all the necessary documents and received a permit from the Municipality for use under N 3. I was one of the first to start doing this kind of work. Unlike some, I'm not offended by being called a tavern keeper. It is important to love your profession and work it with pleasure. And I was definitely drawn to this job. I started, as they say, from scratch, I did not take credit, I will repeat again, my friends helped me. And after my wife retired a few years ago, the business started to develop well, we offer a variety of food, mostly grilled. The menu includes mainly Tatar meatball with cheese, chicken steak, pork steak, homemade sausage and the specialty of the "Ala Bako" restaurant. We also offer several types of salads - dairy, Shopska, shepherd's, pickle, which are currently being prepared. There are also a variety of soft drinks, brandies and wines. The main thing for us is for the customers to feel good. We try to always be cozy, often visitors say that here they feel like they are at home. Everyone is welcome to me. In the preparation of food, there are some subtleties that only we know. We treat customers politely, we offer cosiness, always fresh and quality prepared food and especially acceptable prices. The combination of these three things must attract people here." Bakoto is too modest to admit that very often a vacancy is difficult to find in his pub and sometimes a reservation in advance is required. The fame of the delicacies it offers has long been known outside of Velingrad, and even abroad. This is what greeting cards from different places of the country, and even from Italy and the United States, talk about.
